Family Food – Pizza Pinwheels
Ok, these are the ultimate easy-peasy summer picnic food for all the family. Great for baby led weaning too. This recipe is for pizza pinwheels but experiment with your own fillings…the options are endless!
Ingredients:
- Packet of pre-rolled puff pastry (sheet)
- tomato purée
- 1 clove garlic
- oregano and basil (dried or fresh)
- mozzarella, cheddar or parmesan cheese
- thinly sliced ham or other sliced meat (optional)
- 1 egg for and egg wash (optional)
Method:
- Preheat oven
- Defrost the pastry if necessary and unfold the sheet onto a lined baking tray
- Make a pizza sauce by mixing tomato purée, garlic and herbs
- Smooth the sauce over the pastry sheet (leave about 1cm border)
- Sprinkle ham (if using) and grated cheese on top
- Roll the pastry up into a long roll
- Slice around 1.5cm thick slices (use a sharp knife and it can help to put it in the fridge for a bit before slicing if its soft and squishy!)
- Place slices on a baking tray and lightly brush each one with a beaten egg
- Bake for 12-15 minutes until golden and delicious. Try to resist eating straight out of the over but they are so good while still warm!!
Other filling ideas – tuna melt (tuna, sweetcorn, red onion and cheese), spinach and ricotta, apple and cinnamon, your favourite jam and/or fruit, nutella (really bold! But you can make your own homemade nutritious version!)
