Healthy nutritious pancakes your kids will love!

Pancake Tuesday is around the corner (February 9th) so we’ve put together a couple of delicious and healthy pancake recipes for all the family.

Here are 3 different pancake batter recipes – just make the batter in the usual way and enjoy! Pancakes are more the American style crumpets but you could experiment with adding more liquid to make them more crepe like.

Coconut Flour Pancakes

These are delicious, grain and gluten and refined sugar free and full of good nutrition including lots of protein and fibre.


  • 2oz Coconut Flour
  • 2oz coconut oil or butter
  • 1/2 tsp baking powder
  • 1/2 teaspoon salt (optional)
  • 8fl oz sweetened or unsweetened almond milk
  • 1 tsp vanilla extract
  • 3 eggs
  • Maple Syrup or honey to sweeten batter if you wish
  • Coconut oil for frying

Buckwheat Flour Pancakes

These have a slightly nuttier taste and are scrummy!


  • 120g Buckwheat Flour
  • 2 Eggs
  • 2 Tablespoons of Coconut Oil
  • 1 Teaspoon of Vanilla extract
  • 1 Teaspoon of Baking Powder
  • Pinch of Coarse Salt (optional)
  • 260 ml of Almond Milk,
  • Coconut Oil for Frying

Sweet Potato Pancakes

Sweetened only by yummy sweet potato; full of beta carotene and vitamins, these are a real winner!

  • 1 cup flour ( I use wholemeal spelt but you could use wheat flour or gluten-free)
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt (optional)
  • 1 large egg
  • 1 1/4 cups milk (dairy or almond)
  • 1 tablespoon coconut oil or rapeseed oil
  • 1 cup sweet potato puree (boiled or steamed sweet spuds and pureed)
  • 1 teaspoon vanilla extract (optional)

Healthy topping ideas:

Fruit – especially berries either mixed into the batter or served on top!

Maple Syrup (Less bold then sugar but use sparingly!)

Home Made healthy and vegan Nutella. This is too delicious.
